Prep Time 10 minutes
Total Time 10 minutes
Servings: 1 serving (about 6 pinwheels)
Course: Lunch
Cuisine: American

Ingredients

  • 1 large (10-inch) whole-wheat tortilla
  • 2 tbsp cream cheese or hummus softened
  • 3 slices low-sodium turkey breast
  • 1 small handful baby spinach
  • 1/4 red bell pepper cut into thin strips
  • 2 tbsp shredded carrot

Method

  1. Warm the tortilla for 10 seconds in the microwave so it rolls without cracking.
  2. Spread cream cheese or hummus all the way to the edges; it acts as the glue.
  3. Layer turkey over the bottom two-thirds, then add spinach, bell pepper strips and carrot in an even layer.
  4. Roll up tightly from the filled end. Wrap in plastic wrap and chill 10 minutes so the roll holds its shape.
  5. Trim the ends and slice into 1-inch pinwheels with a sharp serrated knife.
